How to clean chicken feet

While few enjoy the first part of this task, almost all enjoy the result - delicious, gelatin rich chicken stock.

Ingredients: 

One large pot
Water
Chicken feet

Cleaning chicken feet is not like eating chicken soup, but it is sure worth the effort to get from one to the other. Below is one way to clean the skin off the feet.

1. Bring a pot of water to a boil. Plan on doing a number of feet at once, since you will get your hands very slimy while doing them so you may as well wash everything, including your hands, only once.

2. Drop in a few feet at a time into the boiling water. Let them sit for a few minutes.

3. Remove feet from the water with tongs. Allow the feet to cool just a little so you do not burn yourself.

4. Remove the skin from the feet. I found it best to start on the ankle portion and rip some off, then use this as a starting point for working down to the toes. Also, for doing the toes, I found that grabbing very tightly at the base of a tow and pulling up would often remove all the skin around the toe to the toenail. Overall, it is best to work in strips to peel the skin off rather than little pieces.

5. If there is hard, black looking stuff stuck on sole of the foot, use a knife to remove it via a prying motion, but be careful, because you are using a knife!

6. Make some chicken stock with some of the feet per a good chicken stock recipe and freeze the rest of the feet for your next batch.

7. Wash your hands with very warm/hot water to remove the gooey stuff.
