Coconut Cream Cake and Cookie Frosting (GFDF Recipe)

Traditional sweets are an enjoyable and nutritious part of life. Here is one possible way to keep these two important parts of food together.

Ingredients: 

Coconut Cream Concentrate (Tropical Traditions)
Raw Honey (or Sucanat or Rapadura, turned into powdered sugar by running through a coffee grinder)
Organic Vanilla
Filtered water

Take 1 cup Coconut Cream Concentrate (available from Tropical Traditions)
and combine with ¾ cup honey, ¼ water, and 1 tbsp vanilla.

Please note that you will need to adjust the amount of honey up on down depending on your preferences. We original did 1 cup and found it far too sweet.

Optional: Replace vanilla with essential oil of peppermint or wintergreen, etc… to create various flavored icings (EO's are available from Frontier or Young Living).

Place in a mixer and beat/whip ingredients together until well combined.
