Buttermilk Biscuits

Buttermilk Biscuits

Makes approximately 12 biscuits.
Mill two cups Spelt or other grain into flour.
Mix in 1 cup of buttermilk (homemade OR ½ cup water to ½ cup yogurt OR 1 cup milk or sour milk). Allow the mixture to sit in a glass container for 12-24 hours.
Add 1 TBS baking powder and ½ tsp salt.
Drop biscuit mix by spoonfuls onto a greased cookie sheet.
Bake at 400º for about 12 minutes or until lightly browned.
Various Variations

1. When adding the baking powder and salt, you may also add 3-5 TBS of palm shortening, butter, or coconut oil. Palm shortening will cause the biscuits to become very flaky in texture.
2. Cook in a stoneware or cast iron muffin pan rather than on a cookie sheet. You will get muffin style biscuits.
