Almond Millet Muffins

Description:
One of our favorite muffins, millet has a wonderful flavor that stands out among the various grains.

Amount: 12 Large Muffins
Bake: 350 for 20-25 minutes
Day 1:
Mix together in a glass container
2 cups millet flour
¼ cup coconut oil
1 cup buttermilk
1/3 cup honey.
Allow the mixture to sit in a warm place.
Day 2:
Blend together thoroughly with the ingredients from day one.
2 eggs
½ teaspoon almond extract
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
Fold in…
½ cup chopped crispy almonds
Fill muffin cups 2/3-3/4 full.
Bake at 350 for 20-25 minutes.
Allow to cool for 5 minutes before removing from pan.
